  • 3 tablespoons olive oil or unsalted butter
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 oz spaghetti or linguine
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, warm the olive oil or butter. Add the sliced onions and salt; cook slowly for about 30–40 minutes until golden brown.
  2. Stir in minced garlic and cook for an additional 2–3 minutes until fragrant. Season with black pepper.
  3. Meanwhile, boil salted water in a pot and cook spaghetti or linguine according to package instructions until al dente.
  4. Reserve ½ cup of pasta water before draining the pasta. Add cooked pasta to the skillet with caramelized onions.
  5. Gradually mix in reserved pasta water until desired consistency is reached and stir in grated Parmesan cheese.
  6. Toss well over low heat and garnish with fresh parsley before serving hot.
