  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups finely shredded carrots
  • Optional: 1/2 cup chopped walnuts or pecans
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a 9-inch springform pan.
  2. In one bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the eggs, sugars, oil, and vanilla until well combined. Gradually add the dry mixture and fold in shredded carrots (and nuts if using).
  4. Pour the carrot cake batter into the prepared pan.
  5. For the cheesecake layer, beat cream cheese until smooth. Add sugar, flour, vanilla extract, eggs (one at a time), and sour cream until well blended.
  6. Gently pour the cheesecake mixture over the carrot cake layer.
  7. Bake for about 50–60 minutes until just set in the center; cool gradually in the oven before chilling completely in the fridge.
