  • 1 tsp baking powder

  • 1 1/2 cups vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 3 cups shredded carrots
  • 1 1/2 cups unsalted butter
  • 2 sticks cream cheese (8 oz)
  • 10 cups powdered sugar
  • Chopped pecans for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease two baking pans.
  2. In a mixing bowl, whisk together flour, sugars, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine vegetable oil, eggs, vanilla extract, and milk until smooth.
  4. Fold the wet mixture into the dry ingredients and then gently mix in the shredded carrots.
  5. Divide the batter evenly between the prepared pans and bake for 30–35 minutes until a toothpick comes out clean. Cool completely.
  6. For frosting, beat softened butter and cream cheese until smooth. Gradually blend in powdered sugar until creamy.
  7. Layer the cooled cakes with frosting in between and around the sides. Top with chopped pecans.
