  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 2 cups cooked white basmati rice (or grain of choice)
  • Green Tahini Sauce: tahini, fresh cilantro, fresh parsley, lemon juice, garlic

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine curry powder, paprika, ground cumin, kosher salt, and black pepper.
  3. On one baking sheet, spread cauliflower florets; on another sheet, add chickpeas. Drizzle with olive oil and sprinkle with spice mixture; toss to coat.
  4. Roast both sheets for 30 minutes until golden brown and crispy.
  5. While vegetables roast, prepare the Green Tahini Sauce by blending all sauce ingredients with warm water until smooth.
  6. Assemble bowls with rice as the base topped with roasted cauliflower and chickpeas. Drizzle with sauce before serving.
