  • 1.52 lb center-cut beef tenderloin
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • 2 shallots, finely chopped
  • 1 cup dry red wine
  • 1 cup beef stock
  • Fresh thyme and bay leaf

Instructions

  1. Remove the beef from the fridge 30–60 minutes before cooking; pat dry and season with salt and pepper.
  2. Preheat oven to 400°F (200°C). Heat olive oil in a cast iron skillet over medium-high heat.
  3. Sear the beef on all sides for about 2 minutes each until browned.
  4. Transfer the skillet to the oven and roast for 15-20 minutes until reaching an internal temperature of 115°F (46°C) for medium-rare.
  5. Let the beef rest under foil for 10 minutes before slicing.
  6. In the same skillet, sauté shallots until softened; add red wine and scrape up browned bits. Simmer until reduced by half.
  7. Add beef stock, thyme, and bay leaf; simmer further until slightly thickened.
  8. Remove herbs and stir in butter for a glossy finish before serving.
