  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup crushed graham crackers
  • 1/4 cup chopped nuts (optional, walnuts or pecans)
  • 1 tbsp lemon juice (to prevent browning of apples)
  • 1/4 cup caramel sauce (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and dry the apples, then core them carefully, leaving the bottoms intact.
  3. Drizzle lemon juice inside the apples to prevent browning.
  4. In a mixing bowl, beat together cream cheese and sugars until smooth. Add sour cream, vanilla extract, cinnamon, salt, and mix well.
  5. Fold in crushed graham crackers and any optional nuts.
  6. Fill each apple with the cheesecake mixture and place them upright in a baking dish.
  7. Cover with aluminum foil and bake for 25-30 minutes until tender; then remove foil and bake for an additional 10-15 minutes until tops are lightly browned.
  8. Allow cooling slightly before serving drizzled with caramel sauce.
