  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 cup enchilada sauce
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • Optional: sour cream and chopped cilantro for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent; add garlic and cook for another minute.
  2. Add ground beef to the skillet and brown it thoroughly. Drain excess fat if necessary.
  3. Stir in black beans, tomatoes with green chilies, and taco seasoning; simmer for about 5 minutes.
  4. Cook cheese tortellini according to package instructions; drain carefully.
  5. Preheat the oven to 350°F (175°C). In a mixing bowl, combine beef mixture with cooked tortellini.
  6. Spread enchilada sauce in a baking dish; add the tortellini mixture on top, cover with remaining sauce and sprinkle with cheddar cheese.
  7. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
