  • 2 cups water
  • 1 teaspoon Kosher salt
  • 1 cup yellow cornmeal grits
  • 2 tablespoons salted butter
  • 1 cup shredded white cheddar cheese
  • 4 slices bacon (chopped)
  • pounds shrimp (peeled & deveined)
  • 1½ cups chopped onion
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • 1½ cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon cayenne pepper
  • 1 teaspoon hot sauce
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup chopped green onions
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook grits: Combine milk, water, and salt in a pot. Boil, then whisk in grits. Cook on low for 20 minutes until thickened. Stir in butter and cheese.
  2. Prepare shrimp: In a skillet, cook bacon until crispy. Remove bacon, then sauté shrimp and onion until shrimp are pink. Add garlic and seasonings.
  3. Combine: Sprinkle cornstarch over shrimp mixture, add chicken broth and heavy cream. Simmer for 5 minutes.
  4. Serve: Spoon grits into bowls, top with shrimp mixture, crispy bacon, green onions, and parsley.
