  • 5 large bell peppers
  • 2 pounds chicken
  • 1 cup spinach leaves (washed and chopped)
  • 2 cups cheddar cheese (shredded)
  • 1 teaspoon ground sage
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 cup Monterey Jack cheese (shredded)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the bell peppers, slice them in half lengthwise, and remove the seeds.
  3. Cut the chicken into small pieces for quick cooking.
  4. In a mixing bowl, combine the diced chicken, sage, salt, black pepper, spinach, and 1½ cups of cheddar cheese until well mixed.
  5. Fill each halved pepper with the chicken mixture and press down gently.
  6. Place stuffed peppers on a baking sheet and bake for 45 minutes to 1 hour until chicken is fully cooked.
  7. Remove from oven, sprinkle remaining cheddar and Monterey Jack on top, then return to oven for an additional 10 minutes until cheese melts.
  8. Allow to cool slightly before serving.
