  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (melted)
  • 1 cup sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (room temperature)
  • ½ cup milk (room temperature)
  • 2 cups fresh or frozen cherries (pitted and chopped)
  • Optional: ¼ cup coarse sugar for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line muffin pans with cupcake liners.
  2. In one bowl, whisk the flour, baking powder, and salt together. In another bowl, mix melted butter, sugar, eggs, sour cream, milk, and vanilla until combined.
  3. Gently fold the dry ingredients into the wet mixture without overmixing. Chill the batter in the fridge for 30 to 60 minutes.
  4. Fold in the cherries before using a cookie scoop to fill each muffin liner evenly. Top with coarse sugar if desired.
  5. Bake for 18 to 22 minutes or until a toothpick comes out clean.
