  • ¼ cup ground pistachios
  • 5 tbsp melted butter
  • 16 oz cream cheese
  • ½ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • ¼ cup pistachio pudding mix (dry powder)
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (160°C) and prepare a springform pan.
  2. Make the crust by mixing graham cracker crumbs, ground pistachios, sugar, and melted butter; press into the pan and bake for 8 minutes.
  3. Prepare the filling by beating cream cheese and sugar until smooth; add eggs one at a time, then incorporate sour cream, pudding mix, and vanilla extract.
  4. Pour filling over cooled crust; smooth the top and bake for 45–50 minutes. Let cool in the oven.
  5. Chill in the refrigerator for at least 4 hours before topping with cherry pie filling.
