  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning
  • ½ cup flour
  • ¼ cup Parmesan cheese (finely shredded)
  • 4 cloves garlic (minced)
  • 1½ cups white wine (or chicken broth)
  • 1 cup half and half
  • ⅓ cup softened cream cheese
  • 3 cups fresh spinach

Instructions

  1. Pound chicken breasts to about ½-inch thickness using a meat tenderizer.
  2. Dredge each piece in a mixture of flour, salt, pepper, and Italian seasoning.
  3. In a skillet over medium-high heat, melt butter and olive oil. Sear chicken for about 4–5 minutes on each side until golden brown; set aside.
  4. Deglaze the skillet with white wine; reduce by half while adding minced garlic in the last minute.
  5. Gradually stir in warmed half and half and cream cheese until incorporated.
  6. Add fresh spinach; cook until wilted. Return chicken to the skillet to heat through before serving.
