  • ¾ pound rigatoni pasta
  • 32 oz marinara sauce (or up to 48 oz for extra sauciness)
  • 2 small boneless skinless chicken breasts
  • ¾ cup flour
  • 2 teaspoons seasoned salt
  • 2 eggs
  • 1½ cups Italian breadcrumbs
  • 3 cups shredded mozzarella cheese (divided)
  • ⅓ cup grated Parmesan cheese (divided)
  • ¾ cup vegetable oil
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Boil rigatoni in salted water until al dente; drain.
  2. Bread the chicken: coat in seasoned flour, dip in eggs, then breadcrumb mixture.
  3. Fry the chicken in oil until golden brown on both sides; slice into strips.
  4. In a baking dish, layer half of the marinara sauce, rigatoni, half of the cheeses, sliced chicken, remaining rigatoni and sauce, and top with the rest of the cheese.
  5. Bake covered with foil for 25 minutes; remove foil and bake for an additional 15 minutes until bubbly.
