  • 8 bone-in skin-on chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons extra-virgin olive oil
  • 12 cloves garlic, peeled
  • 6 medium shallots, peeled and halved
  • 2 pints cherry tomatoes
  • 1 cup green olives, pitted
  • 1 cup dry white wine (such as Sauvignon Blanc)

Instructions

  1. Preheat your oven to 400°F.
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in a large oven-proof pan over medium-high heat; sear chicken skin-side down for about 4–5 minutes until golden brown.
  4. Flip chicken; add garlic, shallots, tomatoes, olives, and thyme around it in the pan.
  5. Pour in white wine, cover tightly, and transfer to the oven.
