  • 1012 bone-in skinless chicken thighs
  • 3 quarts cold water
  • 1 tablespoon olive oil
  • 2 yellow onions, diced
  • 8 large carrots, chopped
  • 6 ribs celery, chopped
  • 5 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Juice from one lemon
  • 2 bay leaves
  • Fresh chopped parsley (for garnish)

Instructions

  1. In a large stockpot, combine chicken thighs and cold water; bring to a boil. Cover and reduce heat; simmer for 30-45 minutes.
  2. Meanwhile, heat olive oil in a large pot over medium heat. Sauté onions until translucent (4-5 minutes), then add carrots and celery; cook for another 10-15 minutes. Stir in garlic along with salt and pepper during the last two minutes.
  3. Strain the broth into the pot with the cooked vegetables and discard solids.
  4. Shred cooled chicken and return it to the pot along with lemon juice; simmer for an additional 30 minutes.
  5. Garnish with fresh parsley before serving.
