  • 1/4 cup grated Parmesan cheese
  • 1 lb penne pasta

  1. Cook the penne pasta according to package instructions until al dente; drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper before adding it to the skillet. Cook until browned and cooked through, then set aside.
  3. In the same skillet, sauté chopped onion until softened (about 5 minutes), then add minced garlic and cook for another minute.
  4. Stir in thawed spinach and cook for about 2 minutes. Add chicken broth and heavy cream; simmer until sauce thickens slightly.
  5. Incorporate Parmesan cheese, then add cooked penne pasta and chicken to the skillet. Toss everything together, adding reserved pasta water as needed to reach desired consistency.
