  • 1/2 cup unsweetened chocolate chips
  • 2 tablespoons coconut oil
  • 1/2 cup smooth almond butter
  • 2 teaspoons vanilla extract
  • 1/4 cup maple syrup
  • 1 large egg
  • 1/2 cup blanched almond flour
  • 1/4 cup cacao powder
  • 2 cups soaked raw cashews
  • 1 cup full-fat coconut milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. For the brownie layer: Melt chocolate chips, coconut oil, and almond butter over low heat. Stir in maple syrup and vanilla. Add egg, followed by almond flour and cacao powder; mix until smooth. Pour into the prepared pan and bake for 15-17 minutes or until firm. Allow to cool.
  3. For the cheesecake layer: Blend soaked cashews, cacao powder, coconut milk, melted coconut oil, maple syrup, and sea salt until smooth.
  4. Pour cheesecake mixture over cooled brownie layer and smooth out. Freeze for 2-3 hours until firm.
  5. Cut into squares after allowing to sit at room temperature for about 15 minutes before serving.
