  • 16 oz fresh cranberries
  • 1 cup white granulated sugar
  • 1/2 Tbsp vanilla extract
  • 1½ cups graham cracker crumbs
  • ¼ cup brown sugar
  • 5 Tbsp butter (melted)
  • 1 tsp vanilla extract
  • 24 oz cream cheese (softened)
  • ¾ cup heavy whipping cream
  • 2 Tbsp sour cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 Tbsp corn starch
  • ½ cup white granulated sugar
  • 1 vanilla bean
  • 8 oz baking white chocolate bars (24 oz bars)
  • 8 oz cream cheese (softened)
  • 8 oz whipped topping like COOL Whip
  • 8 oz fresh cranberries
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1/2 cup sugar (or super fine sugar)

Instructions

  1. Prepare candied cranberries by soaking them in sugar water overnight.
  2. Make quick cranberry jam by cooking cranberries with sugar and vanilla until soft.
  3. Preheat the oven to 325°F (160°C) and grease a springform pan.
  4. For the crust, mix graham cracker crumbs, brown sugar, melted butter, and vanilla; press into the pan and spread half of the cranberry jam on top.
  5. Beat cream cheese with sugar, then mix in sour cream, eggs, corn starch, heavy cream, and vanilla bean seeds. Pour over the crust.
  6. Bake in a water bath for about 70-75 minutes; cool gradually.
  7. Top with remaining cranberry jam and refrigerate for at least four hours before adding the white chocolate mousse.
  8. Prepare mousse by melting white chocolate and mixing it into whipped cream and cream cheese; spread over cheesecake.
