Ingredients

  • 2 cups warm water
  • 2 tsp active dry yeast
  • 4 cups bread flour
  • 1 ½ tsp salt
  • 1 tbsp olive oil
  • 6 tbsp brown butter
  • 1/3 cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar
  • 2 ½ tbsp milk

Instructions

  1. In a small bowl, combine warm water and sugar; sprinkle yeast over it and let sit until foamy (10-15 minutes).
  2. In a large bowl, whisk flour and salt; add the yeast mixture and olive oil. Stir until sticky dough forms.
  3. Cover with a towel; refrigerate for at least 12 hours for slow fermentation.
  4. Grease a baking pan; pour melted butter into it. Gently deflate the dough and place it in the pan. Let rise for about 1.5 – 2 hours.
  5. Preheat oven to 450°F; dimple the dough with wet fingers and drizzle cinnamon-butter over it before baking for 20-25 minutes until golden.
  6. For icing, mix powdered sugar, milk, and vanilla until smooth; drizzle over warm focaccia before serving.
