  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 2 tbsp cinnamon
  • Light brown sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In one bowl, mix mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and rolled oats.
  4. Gently mix wet ingredients into dry ingredients until just combined.
  5. Prepare cinnamon swirl by mixing melted vegan butter with brown sugar and cinnamon.
  6. Layer half the batter in the pan, drizzle half the swirl mixture, then repeat with remaining batter and swirl.
  7. Swirl through the batter using a knife for a marbled effect.
  8. Bake for about 45 minutes or until a toothpick comes out clean.
  9. Cool slightly before glazing with a mixture of powdered sugar, melted vegan butter, and cream cheese.
