  • ¾ cup packed light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 ½ cups crushed Cinnamon Toast Crunch cereal
  • Icing: ½ cup confectioners' sugar, 1 Tbsp milk, pinch of cinnamon and salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt; set aside.
  3. In a stand mixer, cream butter and sugars until fluffy (3–4 minutes).
  4. Add egg and vanilla; mix until combined.
  5. Gradually incorporate dry ingredients; avoid overmixing.
  6. Fold in crushed Cinnamon Toast Crunch cereal evenly.
  7. Scoop dough onto the baking sheet about an inch apart.
  8. Bake for 10–12 minutes until edges are golden but centers are soft.
  9. Allow cooling briefly before transferring to wire racks; drizzle icing on cooled cookies.
