Instructions

  1. Preheat your oven to 350°F.
  2. In a Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt, pepper, and flour; sear until brown on both sides (about 5 minutes each).
  3. Lower the heat and add beef broth, coconut milk, soy sauce, red curry paste, ginger, garlic, sugar, and fish sauce; stir well.
  4. Return the seared roast to the pot and cover. Roast in the oven for 2 hours.
  5. Shred the beef after cooking and return it to the pot along with sliced onion; let rest before serving.
