  • 2 teaspoon instant yeast
  • ½ cup whole milk
  • 1 large egg
  • 4 tablespoon unsalted butter (for dough)

  • Dark brown sugar and ground cinnamon (for filling)

Instructions

  1. Prepare tangzhong: In a saucepan, whisk together water and flour over medium heat until it forms a paste. Set aside.
  2. Combine dry ingredients: In a mixing bowl, combine flour, sugar, yeast, and salt.
  3. Mix wet ingredients: Warm the milk slightly and dissolve instant coffee in it.
  4. Knead dough: Add wet ingredients and tangzhong to dry mixture; knead until smooth.
  5. Incorporate butter: Gradually add softened butter while kneading until fully combined.
  6. Let rise: Shape the dough into a ball, place in a greased bowl, cover, and let rise until doubled (about 45–60 minutes).
  7. Prepare filling: Blend softened butter with brown sugar, cinnamon, and coffee granules.
  8. Roll out dough: Roll risen dough into a rectangle; spread filling evenly.
  9. Cut rolls: Slice into strips and roll each one; place in a greased baking pan to rise again.
  10. Bake: Preheat oven to 325°F and bake for 20–23 minutes until golden brown.
