  • 2 lb boneless beef shoulder or chuck, cut into 1 1/2-inch pieces
  • Kosher salt and freshly ground black pepper
  • 1/4 cup olive oil (divided)
  • 4 medium onions, halved and thinly sliced
  • 2 tbsp all-purpose flour
  • 1 cup red burgundy wine (e.g., pinot noir)
  • 6 medium carrots, peeled and cut into 1-inch pieces
  • 1 clove garlic
  • 1 bouquet garni (herb bundle)
  • Water
  • Optional: demi-glace for added depth
  • Fresh flat-leaf parsley for garnish

Instructions

  1. Pat the beef dry and season generously with salt and pepper.
  2. Heat half the olive oil in a Dutch oven over high heat. Sear the beef in batches until browned on all sides; remove and set aside.
  3. In the same pot, reduce heat to medium-high and add onions with remaining oil. Cook until softened and golden, about 10 minutes. Stir in flour and cook for an additional 4 to 5 minutes.
  4. Add red wine, scraping up browned bits from the bottom of the pot. Bring to a boil before returning beef along with its juices.
  5. Add carrots, garlic, bouquet garni, and enough water to cover the meat. Bring to a boil, then reduce heat to medium-low and simmer uncovered for about 2 to 2.5 hours until tender.
  6. Discard bouquet garni, taste for seasoning adjustments, garnish with parsley, and serve hot.
