  • 150 grams bittersweet chocolate
  • 76 grams unsalted butter
  • 183 grams granulated sugar
  • 2 large eggs (room temperature)
  • 680 grams full-fat cream cheese (softened)
  • 200 grams heavy cream
  • 2 tbsp candy-coated chocolate pieces

Instructions

  1. Preheat oven to 350°F (175°C). Melt bittersweet chocolate and butter, then mix in sugar and eggs.
  2. Stir in vanilla, flour, cocoa powder, and salt; fold in chocolate chips. Pour into greased springform pan.
  3. Bake for about 25 minutes; cool while preparing cheesecake filling.
  4. Beat cream cheese until smooth; mix in sugar, vanilla, cocoa powder, sour cream, and eggs.
  5. Pour filling over the cooled crust; bake at 325°F (160°C) for about 60 minutes until edges are set but center jiggles slightly.
  6. Cool completely before refrigerating for at least 4 hours. Top with ganache made from heating heavy cream and pouring it over chopped chocolate chips.
