  • 1 cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables (bell peppers, spinach, mushrooms)
  • ½ cup cooked turkey bacon or chicken sausage (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Grease a muffin tin or use a silicone muffin tray.
  3. In a blender, combine eggs, cottage cheese, shredded cheese, milk, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  4. Pour the mixture into a bowl and stir in chopped vegetables and optional protein.
  5. Fill muffin cups about ¾ full with the mixture.
  6. Bake for 20-25 minutes until set and slightly golden on top.
  7. Allow to cool for 5 minutes before removing from the tin.
