  • 12 ounces pasta (penne or fettuccine)
  • 1 pound boneless skinless chicken breast, cut into pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add chicken pieces, season with salt and pepper, and cook until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, add remaining butter and sauté garlic and onion until translucent (3-4 minutes).
  4. Stir in cream and broth; add Italian seasoning and red pepper flakes. Simmer for about 5 minutes until slightly thickened.
  5. Return chicken and pasta to skillet; toss to coat evenly with the sauce. Adjust seasoning if necessary.
  6. Serve warm topped with Parmesan cheese and garnish with parsley.
