  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup pecans (toasted and chopped)
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Toast pecans in a skillet over medium heat for 3–5 minutes until fragrant; set aside.
  3. In a mixing bowl, cream softened butter with white and brown sugars until light and fluffy.
  4. Beat in eggs and vanilla extract until well combined.
  5. In a separate bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add to wet mixture.
  6. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until just combined.
  7. Chill the dough in the fridge for at least one hour.
  8. Scoop dough onto prepared baking sheets leaving space between each cookie.
  9. Bake for 12–14 minutes or until golden around the edges but still soft in the center.
  10. Allow cookies to cool on the baking sheet before transferring to wire racks.
