  • 2 medium sweet potatoes (about 400g)
  • 2 tablespoons olive oil
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 medium avocado, sliced
  • ½ cup feta cheese, crumbled
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube sweet potatoes into bite-sized pieces. Toss in a mixing bowl with olive oil, paprika, cumin, salt, and pepper.
  3. Spread sweet potato cubes on a lined baking sheet and roast for about 25-30 minutes until tender and golden.
  4. In a skillet over medium heat, sauté chickpeas with a drizzle of olive oil for about 5-7 minutes until slightly crispy.
  5. Add fresh spinach to the skillet and cook until wilted (about 1 minute), then remove from heat.
  6. Assemble your bowls by layering roasted sweet potatoes as the base, topping with sautéed chickpeas, wilted spinach, avocado slices, and crumbled feta.
