  • 16 oz medium portobello mushrooms
  • 4 oz lump or claw crab meat
  • 4 oz cream cheese (softened)
  • 1/2 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese (for filling)
  • 1/4 cup grated Parmesan cheese (for topping)
  • 1 egg
  • 1 tbsp olive oil (to cook veggies)
  • Diced mushroom stems
  • 2 garlic cloves
  • 1/4 cup bread crumbs
  • 1 tbsp minced fresh parsley
  • 1 tbsp minced chives
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Clean mushrooms, remove stems, and chop them finely.
  3. In a sauté pan, heat olive oil over medium heat. Sauté chopped onion and mushroom stems until caramelized, then add minced garlic and cook until fragrant.
  4. In a mixing bowl, combine sautéed veggies with crab meat, cream cheese, egg, breadcrumbs, Parmesan, parsley, chives, salt, and pepper.
  5. Fill each mushroom cap with the mixture and top with additional Parmesan.
  6. Bake for approximately 20 minutes until golden brown.
