  • A sleeve of Ritz crackers, or similar brand, plus more for serving
  • 1/2 stick (4 Tbsp.) butter, melted
  • 1/2 cup shredded Parmesan or Romano cheese
  • 2 slices of bacon
  • 1 yellow onion, diced
  • 1 cup green onions, sliced
  • 3 packs of 8 oz. cream cheese, room temp (full fat)
  • 3 eggs
  • 1 cup whipping cream
  • 16 oz. crabmeat (preferably Louisiana crabmeat)
  • 2 cups Swiss cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. For the crust, crush Ritz crackers, mix with melted butter and Parmesan cheese, then press into the bottom of a springform pan.
  3. Cook bacon until crispy; sauté yellow onion in bacon grease.
  4. In a mixer, blend cooked bacon, onions, green onions, cream cheese, eggs, whipping cream, and Swiss cheese until smooth; fold in crabmeat gently.
  5. Pour filling into the crust and bake for 30-40 minutes until set but slightly jiggly.
  6. Cool at room temperature before refrigerating overnight for best flavor.
