  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C). Wash sweet potatoes, prick them with a fork, and bake on a baking sheet for 45-60 minutes until soft.
  2. While they bake, rinse cranberries and chop apples into small pieces.
  3. Once baked, let sweet potatoes cool slightly, slice in half lengthwise, and scoop out the flesh into a mixing bowl.
  4. Add cranberries, apples, brown sugar, cinnamon, butter, and salt to the bowl; mash until well combined but still chunky.
  5. Spoon the mixture back into the potato skins and return to the oven at 350°F (175°C) for an additional 20 minutes.
