  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1/2 cup dried cranberries
  • 4 ounces Brie cheese, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Garlic powder
  • Onion powder
  • Dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut pockets into each chicken breast.
  3. Season the chicken inside and out with salt, pepper, garlic powder, onion powder, and thyme.
  4. Sauté spinach in olive oil until wilted; let cool.
  5. Mix sautéed spinach with cranberries.
  6. Stuff each chicken breast with the spinach-cranberry mixture and Brie slices.
  7. Secure with toothpicks.
  8. Sear in an oven-safe skillet for 3 minutes on each side until golden.
  9. Add chicken broth around the chicken in the skillet.
  10. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  11. Let rest for 5 minutes before serving.
