  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 12 oz penne, fettuccine, or spaghetti
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and Cajun seasoning. Cook until golden brown on both sides (about 6-7 minutes per side). Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in remaining Cajun seasoning, heavy cream, chicken broth, and Parmesan cheese until well combined.
  4. Slice the cooked chicken and return to the skillet along with the drained pasta. Toss until coated in sauce.
