  • 12 oz sliced andouille sausage
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup chopped celery

  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning

Instructions

  1. Dice the potatoes and chop the onions, bell peppers, celery, and garlic. Slice the sausage into bite-sized pieces.
  2. In a large pot, heat butter and olive oil over medium heat. Add the sausage and cook until browned. Remove and set aside.
  3. Sauté onions, celery, and bell peppers in the same pot for 5-7 minutes until softened. Add garlic and cook for another 30 seconds.
  4. Return the sausage to the pot along with Cajun seasoning and potatoes. Pour in chicken broth; bring to a boil then reduce to simmer for 15-20 minutes until potatoes are tender.
  5. Use an immersion blender to partially blend the soup for a creamy texture while keeping some potato chunks intact.
  6. Stir in heavy cream, warm gently without boiling, then adjust seasonings as needed before serving.
