  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 generous cups uncooked egg noodles
  • Salt & pepper (to taste)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Sauté chopped celery, carrots, and onion in olive oil and butter in a large pot over medium-high heat for 5–7 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in flour to create a roux and cook for about one minute.
  4. Gradually pour in chicken broth while stirring until smooth; add chicken breasts, Italian seasoning, and heavy cream.
  5. Increase heat to bring to a gentle boil; cover slightly open to allow steam to escape.
  6. Reduce heat to let simmer for 10 minutes.
  7. Add uncooked egg noodles; cover again and cook for an additional 8–10 minutes, stirring occasionally.
  8. Remove chicken, chop into bite-sized pieces, return to pot, season with salt and pepper, and stir in parsley before serving.
