  • 2 tbsp unsalted butter
  • ½ cup onion (finely chopped)
  • ½ cup celery (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp all-purpose flour
  • 2 cups seafood or chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. In a large pot over medium heat, melt the butter and sauté onions, celery, and garlic for 3–4 minutes until softened.
  2. Stir in tomato paste, Old Bay seasoning, salt, black pepper, and optional cayenne pepper; cook for another minute until fragrant.
  3. Sprinkle flour into the pot while stirring constantly to form a roux; cook for about 1 minute.
  4. Gradually pour in the broth while stirring; bring to a simmer and cook for 10 minutes.
  5. Reduce heat and add heavy cream, Worcestershire sauce, lemon juice, and thyme; simmer gently for an additional 5 minutes.
  6. Fold in crab meat and cook for another 2–3 minutes until warmed through.
  7. Adjust seasoning if needed and serve hot with crusty bread.
