  • 2 cups thinly sliced mini cucumbers (~1/8" thick)
  • 1 1/2 cups English peas (we use frozen)
  • 1 1/2 cups thinly sliced sugar snap peas
  • 1 cup thinly sliced radishes (1/16" thick)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh chives
  • 1 garlic clove, grated
  • 1 tablespoon freshly squeezed lemon juice
  • Salt & pepper to taste
  • 1/2 cup crumbled feta cheese, plus more to taste

Instructions

  1. Cook frozen peas according to package directions; rinse under cold water.
  2. In a small bowl, combine Greek yogurt, mayonnaise, chopped dill, chives, grated garlic, lemon juice, salt, and pepper. Whisk until smooth.
  3. In a large salad bowl, combine sliced cucumbers, cooked peas, sugar snap peas, sliced radishes, and crumbled feta cheese.
  4. Drizzle dressing over the salad and toss gently to combine.
  5. Serve immediately for the best flavor and freshness.
