  • ¾ cup light cream
  • 2 cups short pasta
  • 1 cup fresh spinach

Instructions

  1. In a slow cooker, combine chicken broth, chicken breast, roasted red peppers, parsley, garlic, salt, oregano, basil, and pepper. Cook on high for 3 hours or low for 6 hours until the chicken is cooked through.
  2. Remove the chicken and shred it with two forks before returning it to the slow cooker.
  3. Whisk together light cream and corn starch until smooth. Add this mixture along with pasta and spinach to the slow cooker.
  4. Cook on high for an additional 15-30 minutes until pasta is al dente. Stir in Parmesan cheese just before serving.
