  • 4 (6-oz.) salmon fillets
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. butter
  • 3 cloves garlic, minced
  • 1 tbsp. all-purpose flour
  • 1 1/4 c. heavy cream
  • Juice and zest of 1 lemon
  • 2 tbsp. chopped dill
  • Crushed red pepper flakes

Instructions

  1. Season salmon with salt and pepper. In a skillet over medium-high heat, heat olive oil and sear salmon skin-side up for about 6 minutes until golden. Flip and cook for another 5 minutes until crispy. Remove from skillet.
  2. In the same skillet, reduce heat to medium, add butter and minced garlic; sauté until fragrant (about 30 seconds). Stir in flour, whisking continuously for another 30 seconds.
  3. Gradually add heavy cream, bringing to a simmer until thickened (2 to 4 minutes). Stir in lemon juice, zest, dill, and season to taste.
  4. Return salmon to the skillet; simmer in the sauce for about 1 minute before serving garnished with crushed red pepper flakes.
