  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 1 small clove garlic (minced)
  • 1/4 cup chicken broth or dry white wine
  • 2 teaspoons lemon juice + zest of 1/2 lemon
  • 1 cup heavy cream
  • 1/3 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil salted water in a pot and cook the pasta al dente according to package directions.
  2. In a skillet over medium-high heat, melt butter. Add flour and stir for 1-2 minutes.
  3. Stir in minced garlic, then add chicken broth (or wine), lemon juice, and zest. Let bubble for about a minute.
  4. Whisk in heavy cream and cook until thickened to your liking.
  5. Remove from heat; stir in parmesan cheese and season with salt and pepper.
  6. Drain pasta, toss it in the skillet until coated, adding reserved pasta water if needed. Garnish with parsley and extra parmesan before serving.
