  • 6 cloves garlic
  • 1/2 cup sundried tomatoes
  • 3 tbsp tomato paste
  • 3/4 cup heavy cream
  • 1 cup grated hard cheese (parmesan or pecorino)
  • 2 cups vegetable stock
  • Fresh basil and lemon wedges for serving

Instructions

  1. Cook lentils until tender—use an Instant Pot (9 minutes on high) or stovetop (20 minutes simmering).
  2. Sauté diced onion in oil from sundried tomatoes until soft; add crushed garlic and cook briefly.
  3. Stir in crushed fennel seeds, smoked paprika, and Italian seasoning until fragrant.
  4. Mix in tomato paste and chopped sundried tomatoes; set aside.
  5. Drain cooked lentils and rinse under cold water.
  6. Combine lentils with the sautéed mixture; add vegetable stock and let simmer for 10 minutes.
  7. Stir in cream, cheese, and basil over low heat until melted.
