  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat; season shrimp with salt and pepper and sauté until pink (about 1-2 minutes per side). Remove from the skillet.
  3. In the same skillet, add garlic and sun-dried tomatoes; sauté for about a minute.
  4. Stir in heavy cream, Parmesan cheese, Italian seasoning, and optional red pepper flakes; simmer until thickened (3-4 minutes).
  5. Toss cooked pasta in the sauce; adjust consistency with reserved pasta water if needed.
  6. Add the shrimp back to the skillet; mix well to combine and heat through before serving.
