  • 1/2 cup breadcrumbs (panko or regular)

  • 8 oz mushrooms (sliced)
  • 1 cup heavy cream
  • 2 tbsp olive oil

  • Garlic, salt, and pepper

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, black pepper, and dried thyme. Mix gently.
  2. Form the mixture into 1-inch meatballs and set aside.
  3. Heat olive oil in a skillet over medium heat. Sear the meatballs until browned on all sides (5-7 minutes). Remove from skillet.
  4. In the same skillet, melt butter and sauté sliced mushrooms for about 5 minutes. Add minced garlic and cook for another minute.
  5. Stir in heavy cream and chicken broth; bring to a simmer.
  6. Return meatballs to the skillet and cook for about 10 minutes until fully cooked through.
