  • 1 shallot
  • 2 garlic cloves
  • 1 cup chicken or vegetable broth
  • 1.5 tbsp Dijon mustard
  • 1 tbsp grainy mustard
  • ¾ cup heavy cream
  • 1.5 tsp cornstarch
  • 2 tsp water
  • 1 tsp lemon juice
  • Fresh dill

Instructions

  1. Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 35 to 40 minutes until tender and golden brown.
  2. In a skillet over medium heat, melt butter with olive oil. Sauté diced shallots for about 3 minutes; then add minced garlic and cook for an additional minute.
  3. Pour in broth, bring to a simmer, and whisk in Dijon and grainy mustard along with salt and pepper. Reduce by one-third.
  4. Stir in heavy cream and simmer again. Mix cornstarch with water to form a slurry; whisk into the sauce until thickened. Add lemon juice.
  5. Serve roasted potatoes topped with the creamy sauce and fresh dill.
