  • 4 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz pasta (fettuccine or penne)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by cutting chicken into bite-sized pieces and draining artichokes.
  2. In a large pot over medium heat, sauté chicken in olive oil until golden brown (5-7 minutes). Season with salt and pepper.
