  • 3 cups peeled, diced butternut squash
  • 1 small red onion, diced
  • 12 ounces spicy Italian sausage
  • 2 cloves garlic, minced
  • 1 bunch Swiss chard, chopped
  • 1 teaspoon red chili flakes
  • Salt and pepper to taste
  • 8 ounces rigatoni
  • ¼ cup crème fraîche
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add butternut squash and cook until lightly browned (6-7 minutes).
  2. Stir in diced red onion and sauté until tender (about 4 minutes). Add spicy Italian sausage, breaking it up into small pieces; cook until browned (around 3 minutes).
  3. Mix in minced garlic, Swiss chard, and red chili flakes; cook until Swiss chard wilts (about 3 minutes). Season with salt and pepper.
  4. In a separate pot, boil salted water and cook rigatoni until al dente (8 minutes). Reserve ¼ cup pasta water before draining.
  5. Combine rigatoni with the sausage mixture; add reserved pasta water, crème fraîche, and grated Parmesan. Stir to coat pasta in sauce; heat for an additional minute.
  6. Serve hot with extra Parmesan on top.
