  • 1 tbsp low sodium soy sauce
  • ¼ tsp baking soda
  • lb boneless skinless chicken breast (cut into 2 inch pieces)
  • ¼ cup almond flour
  • ¼ cup all purpose flour
  • 1½ cups crispy rice cereal
  • Salt and pepper
  • Frying oil
  • 23 cloves garlic (minced)
  • ¼ inch knob ginger (minced; about ½ tsp)
  • 2 tbsp low sodium soy sauce
  • 1 tbsp oyster sauce
  • 1½ tbsp white granulated sugar
  • 1 tbsp corn starch
  • ⅓ cup low sodium chicken broth
  • ¼ cup sliced almonds
  • 12 green onion (thinly sliced; for garnish)

Instructions

  1. Marinate the chicken by mixing egg, soy sauce, baking soda, salt, and pepper in a bowl. Add chicken pieces and let them marinate for at least 30 minutes.
  2. In another bowl, combine almond flour, all-purpose flour, crispy rice cereal, salt, and pepper for dredging.
  3. Remove marinated chicken from the mixture and coat each piece in the dredge.
  4. Heat oil in a heavy-bottomed pot to 350°F and fry the chicken until golden brown (about 3-4 minutes).
  5. Toast sliced almonds in a skillet until golden.
  6. Prepare the sauce by combining garlic, ginger, soy sauce, oyster sauce, sugar, cornstarch, broth, salt, and pepper; simmer until thickened.
  7. Toss fried chicken with sauce and toasted almonds before serving.
