  • 1/2 medium avocado
  • 1/4 cup sour cream
  • 2 tsp avocado oil
  • 8 oz lean ground turkey
  • 6 fajita-sized flour tortillas
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 425°F.
  2. In a mini food processor, blend avocado, sour cream, lime juice, cilantro, salt, and water until smooth. Refrigerate until ready.
  3. Heat avocado oil in a non-stick pan over medium heat. Cook ground turkey and onions for 4-5 minutes until browned.
  4. Add black beans, green chiles, taco seasoning, water, and cilantro; simmer for 15 minutes.
  5. On a baking sheet, lay tortillas and sprinkle cheese on each. Spoon turkey mixture onto half of each tortilla and fold.
  6. Bake for 10-12 minutes until crispy and golden brown.
  7. Serve with the avocado sauce.
