  • 1 lb fresh salmon fillets (skinless), cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (to taste)
  • Vegetable oil for frying

Instructions

  1. Prepare the salmon by cutting it into cubes and patting dry.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko mixed with spices.
  3. Coat each salmon cube first in flour, then egg, and finally the panko mixture.
  4. Heat about 1 inch of vegetable oil in a skillet over medium heat.
  5. Fry the salmon bites in batches for about 2-3 minutes per side until golden brown and crispy.
  6. For the bang bang sauce, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  7. Serve hot with the sauce drizzled on top or on the side.
